THIS PRODUCT HAS MANY USES BUT THE FOLLOWING RECIPE IS A CLASSIC.

Fry off some onions, wild mushrooms and creme fraiche in one pan. Add bacon or pancetta cubes.
Stir in a good 100g of smoked sundried tomato pesto and let the flavours flood out. This is a real earthy autumnal or cold winters night dish.

Cook off some thick hollow penne type pasta and once drained 95% stir in all the sauce, add two good dollops of cream and 100g off fresh parmesan.

Serve with a good rye bread and a bottle of red wine.

The same recipe can be used excluding meat and recipe bulked out with aubergine, roasted peppers. Courgettes .

 

A VERY SIMPLE BUT TASTY RECIPE FOR ARTICHOKE HEARTS.

Make up a light tempura batter or beer batter mix. Heat sunflower oil until relevant temperature. Dip whole, half or quarters of artichokes in batter and drop in warm oil for sixty seconds and pat dry.

10 artichoke hearts, 20 halves or 40 quarters,

30g fresh basil leaves, 
1 whole lemon, 
30g capers, 
100g red capia peppers, 
100g grated parmesan or pecorino, 
50ml olive oil. 

Take out platter and layout all freshly battered artichokes. Chop capia red peppers wıth basil and capers and smother warm artichokes. Grate 100g of good parmesan or pecorino over dish when still warm. Drızzle wıth olive oil and use a good crushed black peppermill grınder and season to your tastebuds.
