SLOW ROASTED TOMATOES / FETA SALAD 

Freshly cubed feta cheese 200g,
Fresh corriander 35g,
Fresh kalamata olives,
50ml olive oil,
50g slow roasted tomatoes.

Chop or slice feta cheese into regular shaped pieces. 
Drizzle with olive oil.
Sprinkle whole or pitted kalamata over mix. 
Place slow roasted tomatoes over salad including any spare oil.
Rip fresh aromatic corriander into small pieces and top salad.

Serve with bread, wraps, pitta. Nan or simply as it is.


 

THIS TOMATO VARIETY IS CLIMBING THE CHARTS!

Cook off some chunky variety of pasta, strain, stir in 50g fresh basil pesto. Large spoon of fresh mascarpone, grate fresh pecorino over dish and stir. The heat of the pasta wıll release all the fresh flavours, using a good peppermill crush some black pepper over dish then add the secret weapon slow roasted cherry tomatoes. This dish is heaven on a plate.

   

TAKE A GOOD BUNCH OF MIXED SALAD 

Chop a cucumber in slices. 
Chop an onion in rings. 
Chop 2 colours of peppers. 
Add a mixture of red wine vinegar, balsamic vinegar, olive oil.
Salt and pepper to season. 
Take 50g fresh basil and stir through salad.
Take 75g of plum baby tomatoes infused in oil and add to salad. 

This dressing will be slightly tart on the palate but the sweetness of the tomato and basil really works.
